Le tiliccas, a sweet from Gallura and Logudoro
Tiliccas: typical sweets from Gallura and Logudoro. In one side, the sweet paste is prepared with durum-wheat semolina, water, honey, dried rind of orange (or lemon), peeled, chopped and toasted almonds. In another pan, the durum-wheat flour is knead with lard, until obtaining an amalgam and then a thin layer of paste, from which several long and narrow lines are obtained to wrap the sweet amalgam, before modeling it into disparate shapes. Once cooked into the oven, the “tiliccas” are decorated with the “traggera” (small colorful pearls of sugar) and served cold.
