The Mustazzolus and the tradition of Oristano

The mustazzolus, big sweets with rhomboidal shape, though typical of the province of Oristano, are nowadays are sold in all Sardinia. It is a mixture of flour, brewer's and lukewarm water, with an addition of sugar, grated lemons peel, cinnamon and bicarbonate. The amalgam should rest for 48 hours, covered into a dry cloth. Then the paste is rolled out until obtaining a layer high less than a centimeter. After being slowly baked into the oven, spread the top of the mustazzolus with a dense frosting of water and sugar.
