
Is pabassinas, enormous differences from zone to zone
Pabassinas: called also papassinas, according to the geographic areas, have common ingredients in all the recipes ( pieces of almonds, sultana, flour, sugar and eggs, all decorated with icing) but in certain parts of Sardinia, added to the paste are pine nuts and chopped walnuts, orange's rind, nutmeg, sapa (or "saba": it is the cooked must), colorful sugar-candies. Pabassinas have a lengthened or rhomboidal shape. They are produced everywhere in Sardinia.
