The Pecorino of Nule, a table cheese or a grated ingredient
The Pecorino of Nule takes its name from the country in which it is particularly diffused. It is produced from fresh ovine milk. This cheese presents a cylindrical shape, a semi-cooked, semi-hard or hard pale-yellow texture. Its strong flavour becomes more spicy with seasoning. The rind is intense yellow coloured. The Pecorino of Nule is excellent both as a table cheese and as an ingredient, for example, grated on top of first courses.
