The Fresa, handmade with cow milk
The Fresa is a cheese prepared with cow milk (of Bruno-Sarda and Sarda-Modicana breed ), among the few produced in Sardinia. The milk used is the one of cattle's final lactation, which is rich in fat: this exalts the taste and confers its creamy characteristic, similar to the Stracchino. The Fresa is handmade: a mould gives its shape, then it is wrapped up in cloth without folds, to be subsequently pressed before being salted. Its shape is slightly cylindrical and flat, its soft texture is creamy and in white-yellowish colour. The thin ring is yellow. This cheese very good spread on freshly backed bread. The name Fresa, more in a general, indicates a flat cheese (or a bread). It is quite common in the territory of Ozieri.
