The cheese of Ozieri, from the Bruno-Sarda bree

The cheese of Ozieri is produced with bovine milk (following handicraft techniques) from the breeders of the Bruno-Sarda cows of Ozieri territory. It has a cylindrical shape, and a smooth pale yellow rind (gets darker with seasoning). Its texture is normally white or slightly yellow. It is a table cooked-spicy cheese, which presents an unmistakable characteristic: a very accentuated "occhiatura".
