The Biancospino, table cheese of the last generation
Biancospino, is one of goat milk cheese, recently introduced into the market thanks to studies and technologies of the “Istituto Zootecnico e Caseario della Sardegna”. It has a flattened cylindrical shape, and small dimensions. The texture is white and dense, and the crust is slightly thick and present an unmistakable white layer, similar to felt, due to the employment of a fungus cultivated in laboratory. The Biancospino is table cheese that get spicier with age. It goes on well with red wine.
