Mozzarella is confectioned with a small quantitative of spinning water. The paste is white, soft, stringy, and with an acidulous flavour. The shape can be circular or lengthened, the dimensions changes according to packaging. Buffalo mozzarella is also very requested, stringy cheese of buffalo milk produced in Ortacesus. The industrial process is identical to that one of the cow mozzarella.
