Made of buffalo or cow milk...Mozzarella cheese is ready

Mozzarella, stringy cheese produced with cows milk of  Arborea and its surrounding territory. It is obtained from the coagulation of pasteurized milk or previously treated with extremely hot water. The curd' strings are obtained with a proper industrial machinery.

Mozzarella is confectioned with a small quantitative of spinning water. The paste is white, soft, stringy, and with an acidulous flavour. The shape can be circular or lengthened, the dimensions changes according to packaging. Mozzarella is eaten at table or combined with many other plates of the local cuisine, and it is one of the pizza main ingredients.

Buffalo mozzarella is also very requested, stringy cheese of buffalo milk produced in Ortacesus. The industrial process is identical to that one of the cow mozzarella. After being salted, the mozzarella is confectioned with a small quantitative of spinning water. The paste is white, soft, stringy, and with an acidulous taste. The shape can be circular or lengthened, the dimensions changes according to packaging. The mozzarella is eaten at table or combined with many other plates of the local cuisine, and it is often used as a pizza ingredient.
