The Gioddu, acidulous-tasting yogurt made in Sardinia
The Gioddu cannot be considered a proper cheese, as it is the milk (ovine, goat or vaccine) coagulated with particular ferments. It has a more intense and acidulous taste, compared to the national yogurt. The Gioddu is a typical food of the Sardinian Shepherd that can be eaten either warm or cold.
The Gioddu is rich in active milk enzymes and in nutritious ingredients easy to digest, it is therefore considered an high value dietetic food. Some people eat it sweeten it with with a little bit of honey.
