The increase in demand of "civraxiu", cooked in the firewood
Civraxiu (or civraxu or civrargiu or chibarzu): is a big loaf of bread, prepared in the Barbagie, in Nuorese, in Campidano and in Logudoro. Its base is round, the crust is quite crunchy and its interior is soft and white.
Over the last years the demand of handmade production has been constantly increasing since the unique aroma from the firewood, is not comparable to the industrial oven.
Particularly renowned is “su civraxiu de Seddori" (simply known as the bread of Sanluri), a typical specialty of the small city of Medio Campidano, very much appreciated in Cagliari and in many other localities.
